Recipe: Chicken Lettuce Wraps

Chicken lettuce wraps are a versatile and healthy dish that can be dressed up or down, as both a quick weeknight meal or part of a larger array of items for entertaining. These lettuce cups (a riff on As Easy As Apple Pie’s Healthy Chicken Lettuce Wraps) are sweet and savory with a mix of delicious seasonings like garlic, honey, soy sauce and ginger, and have some kick to them with a little bit of sriracha. Plus, they pair perfectly with a cold glass of sake!


INGREDIENTS:

For the sauce:

6 tablespoons low sodium soy sauce

2 cloves garlic minced (can buy prepackaged minced in the jar) 

2 tablespoons honey

2 tablespoons water

1 tablespoon finely chopped ginger (can use the pre-chopped in jar)

1 tablespoon rice vinegar

1 tablespoon sriracha 

limes (for the juice)

For the chicken:

2 tablespoons sesame oil

1 package lean ground chicken

1 diced onion (can buy prepackaged)

3 diced scallions

RECIPE:

Whisk sauce together and set aside. In a separate pan on medium to medium low heat, sauté onion 6-8 min in sesame oil. Add in scallion and sauté another 2 min. Add in chicken and cook fully, separating with a wooden spoon. When chicken is done, add in sauce, coat and stir, lower to simmer and let sit, stirring occasionally for 3-4 min. Serve with butter lettuce cups.
